Recipe for Gluten Free Banana Bread

Is banana bread healthy? Not really, but as an occasional treat, it is wonderful. Here is our version of easy gluten free banana bread so you can avoid gluten and have a little treat too!

The ingredients are simple and it is really so easy to make.  Nuts are optional as are other items such as raisins or chocolate chips. This is a great recipe that definitely doesn’t taste gluten-free even though it is. Enjoy this gluten free version of banana bread!

  • 2 ripe bananas, mashed
  • 1 package Betty Crocker Gluten Free Yellow Cake Mix
  • 3 eggs
  • 1 stick of butter
  • 1/2 – 1 teaspoon of almond extract
  • 2/3 cup of water
  • Optional: Your favorite nuts

Directions:

In a large mixing bowl, mash up two bananas. Mash them as much as you can, but it’s okay for a few “chunks” of banana to remain.

Prepare cake mix in the same bowl with the bananas according to instructions, but substitute 1/2 – 1 teaspoon of almond extract for the vanilla extract.

Grease the bottom only of a loaf pan.

Pour mixture into the loaf pan and bake or anywhere between 40-50 minutes at 350 degrees Fahrenheit. Note, that the time may vary depending on your oven and the bananas can influence cooking time too.

Your banana bread is done when you can stick a toothpick in it and it comes out clean.

Allow it to cool a bit in the pan.

You can start to eat it while it is warm and I highly recommend this as it is so incredibly delicious when warm.
